Instructions

Make french toast

  1. Crack the eggs open into a small mixing bowl. Start whisking the eggs with a fork until the whites and yolks are combined.

  2. Add the room temperature espresso and milk to the mixing bowl. Add almond extract or amaretto. Finish with a pinch of salt and stir everything together to combine.

  3. Pour the espresso and milk mixture into a flat oven or serving dish. Place the slices of bread inside to soak up the mixture. Turn the slices until both sides are soaked.

  4. Preheat your frying pan on the stove on medium heat. Add butter to the pan and let it melt.

  5. Place the drenched bread slices into the pan. Wait until the bottoms are crispy. Add a bit more butter to the pan and flip the slices onto the other side. Take them out of the pan as soon as both sides as crispy.

Make your mascarpone cream

  1. First, separate the egg whites from the yolks. You will need both for this recipe.

  2. Add the mascarpone cheese to a mixing bowl. Start whipping the cheese with a whisk or stand mixer until you have a smooth consistency.

  3. Add the 4 egg yolks and largest amount of powdered sugar to the whipped cheese. Whisk together thoroughly until well combined.

  4. Next, add the rest of the powdered sugar to the egg whites. Beat with a whisk or stand mixer until you get a fluffy texture.

  5. Carefully fold the beaten egg white mixture under the mascarpone mixture until you get a velvety cream.

How To Serve

  • Place a slice of coffee french toast onto a place. Scoop a generous amount of mascarpone cream on top.

  • Finish with a sprinkling of dark cacao powder, crushed biscoff cookies, some raspberries and mint leaves.
